If you’re looking for a dressing that will make you feel one step closer to heaven - look no further than our Green Goddess Salad Dressing, created by Gippsland local and gorgeous foodie Natasha Vorogushin (@tashcancook on Instagram!).
This dressing is zingy, tangy and slightly sweet, packed with fresh herbs, lemon, vinegar and the unique tartness of Gippsland Jersey Buttermilk! Tash developed this versatile recipe for one of our events earlier this year, and the quantities can be multiplied to cater to a crowd. It can also be made ahead of time so you can have it in the fridge ready to go for a party. It thickens a little after a day, making it even creamier and more delicious!
Our buttermilk is made with live cultures, which means that it contains good bacteria that can be beneficial for your gut health. Along with this, buttermilk also packs protein, vitamin B12, riboflavin, calcium and phosphorus and is low in fat, which is why it’s such a great choice for adding more goodness to a simple salad.

GREEN GODDESS DRESSING
Prep time: 15 mins
Servings: 2 cups/10 serves (need approx. 50 mls per person)
3 cups tender herbs (such as dill, parsely, cilantro, basil, mint, tarragon, and/or chives)
3/4 cup mayonnaise
3/4 cups buttermilk
65 ml extra-virgin olive oil
1.5 tbsp. drained capers
1-2 garlic clove
1.5 tbsp lemon juice
1.5 tbsp white wine or apple cider vinegar
1.5 tbsp maple syrup or honey
Sprinkling of salt
Freshly ground black pepper
Serve straight away, or bottle and store in the fridge. Drizzle over your favourite fresh salad, greens, or even smashed avo on toast! A versatile dressing to suit a range of dishes.
